
Salted Besan Sev

To prepare salted besan sev, chickpea flour is mixed with water, salt, and sometimes a touch of turmeric for color. The mixture is kneaded into a smooth dough, which is then loaded into a sev press or a mold with fine holes.The dough is extruded through the sev press directly into hot oil, where it fries until crispy and golden brown. The fried sev is then carefully removed from the oil and allowed to cool.
